    Newbie here!! Just wanted to share what I had for dinner last night.


    1 onion, chopped
    3 cloves garlic, crushed (I use dried minced garlic)
    2 Tblsp diced jalapeno peppers
    2 teaspoons ground cumin
    1 teaspoon dried oregano
    1 teaspoon ground cayenne pepper
    1 (14.5 ounce) cans chicken broth (I used water with boullion cubes)
    3 cups chopped cooked chicken breast
    4 (15 ounce) cans white beans (I pureed one of the cans of beans for texture)
    1 cup shredded Monterey Jack cheese (I used Colby-Jack and I didn’t measure, just sprinkled it on top of the individual bowls.

    1 Cook chicken (I boiled mine, but you can fry it in oil). Add onion. Mix in the garlic, jalapeno, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, and white beans. Simmer 15 minutes, stirring occasionally.
    2 Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm.

    Add-In Ideas –

    A dollop of sour cream (this is what I used)
