  • Nacho Potato Soup

    Below is the recipe I just had for 7 yr. old doesn't normally like tomato's but she ate them in this. I used the 3-cheese au gratin potato's and added the cheese packet that came with it.(I didn't have to add additional cheese). I do think it needs a little salt & pepper to taste. But we loved, my DH & my 7 yr. old tore it up!

    One of mine ... (for ease, speed of preparation and good taste) ..

    Nacho Potato Soup

    1 pkg. (5-1/4 oz.) au gratin potatoes
    1 can (11 oz.) whole kernel corn, drained
    1 can (10 oz.) diced tomatoes and green chiles,
    2 cups water
    2 cups milk
    2 cups cubed process American cheese
    dash hot pepper sauce, optional
    minced fresh parsley, optional

    In a 3 quart saucepan, combine the contents of the potato package, corn, tomatoes and water; mix well.

    Bring to a boil. Reduce heat; cover and simmer for 15-18 minutes or until potatoes are tender. Add milk, cheese, and hot pepper sauce; cook and stir until the cheese is melted. Garnish with parsley if desired.

    Yield: 2 quarts (6-8 servings)

    *Our family likes this recipe so much that we serve it in BIG bowls ... about 3 -4 servings !!!

      Also recipe calls for tomatos w/ green chili's....I bought the tomatoes that are garlic & basil flavored & was just fine. I think the soup woulda had the kick I was looking for had I had the green chili's. But pepper would do just as well or extra hot sauce.

        Gotta have those ro-tel tomatoes . YUM, the recipe does sound good.
