    Roast 1 large onion and 5 cloves of garlic (skins on) in a skillet over high heat until they turn dark.Roast 4 tomatoes until dark (skins on) Peel onion & garlic. Place roasted tomatoes in a blender (skins on) Add garlic & onion. Pause until smooth. Put a little oil in skillet. When hot add the mixture. Stir until thick, and add 4 cups of seafood stock. Stir well. Then add 1 Bay Leaf & epazote leaves. Add salt to taste. Cook approximately 20 minutes until thick like gravy. In a bowl add 3 T. Masa Herina (corn flour). Add 1/4 cup of stock mixture and mix well. Add this back to the stew mixture and stir well. Cook 10 minutes. Add crab (blue crab is best) buy can use any kind. Cook a five minutes more. DO not over cook. Serve in bowls with a wedge of lime & bread.
