  • Beef Stew in a presure cooker (simple and quick) by racp78

    This is a recipe I created years ago, and everyone loves it. I don't use exact measurments when I cook so these are approximate measurments. Enjoy!

    1.5 lbs stew meat
    4 medium potatoes (cut in 1 inch cubes)
    one medium onion (chopped)(white or yellow)
    3 carrots (sliced)
    3 celery stalks (chopped)
    1 large bottle of V8 juice
    3 Tbls instant tapioca (to thicken sauce)
    3/4 C water

    -Brown stew meat on all sides in oil
    -Add all ingredients into presure cooker except the V8 juice
    -Add enough V8 juice to cover all ingredients
    -Cover and place on high flame until the presure cooker starts releasing steam
    -reduce flame to medium high and cook for appx. 11 minutes
    -immediately cool off presure cooker and serve

    This tastes great and it's easy to make.
