    Brat, Beer & Cheese Soup

    3 bratwurst, cooked and sliced

    3 Tbs olive oil

    1 cup onion, minced

    1 cup celery, minced

    1 cup carrots, minced

    1/4 cup flour

1 lb. potatoes, peeled and diced

    6 cups chicken stock

    1 12oz bottle of beer

    1/2 tsp mustard powder

    1/2 tsp granulated garlic

    1/2 tsp salt

1/2 tsp freshly ground black pepper

1/4 to 1/2 tsp ground chipotle or cayenne pepper

1/2 cup of milk or half and half for more richness

    1/4 tsp worcestershire sauce

2 cups grated sharp cheddar cheese

Heat olive oil in large soup pot over medium heat. Add onions, celery, and carrot and cook 15 minutes, stirring occasionally til tender. Stir in flour, cooking 1 minute. Add potatoes, stock and beer. Bring to a boil and cook 10-15 minutes or until potatoes are tender. Add in all seasonings. Combine milk and worcestershire sauce in a small bowl, then stir into soup. Remove soup from heat. Add the cheese , stirring until melted and smooth. Remove 2 cups of the vegetables with a bit of the liquid and put in a blender and puree. Stir back into soup to give it nice body. Return to low heat, adding in bratwurst and heat til warmed through.
