My boys request this as soon as the weather turns cool. This calls for 1/2 lb ground beef, but I usually just go ahead and use a lb. This came from Taste of Home quite a few years ago.
Cheeseburger Soup
1/2 lb. ground beef
3/4 cup chopped onion
3/4 cup shredded carrots
3/4 cup diced celery
1 teaspoon dried basil
1 teaspoon dried parsley
3 cups chicken broth
4 cups diced potatoes
Brown beef, drain and set aside. Saute onion, carrots, celery, basil and parsley in 1 to 2 Tablespoon butter in soup pot until tender. Add chicken broth, beef and potatoes. Bring to boil. Cover and simmer 10 to 12 minutes or until potatoes are tender.
In a small skillet, melt 3 Tablespoons butter, add 1/4 cup flour, cook and stir 3 to 5 minutes or until bubbly. Add to soup, bring to boil. Cook and stir 2 minutes. Reduce to low then add:
2 cups cubed Velveeta
1 1/2 cups milk
3/4 teaspoon salt
1/4 teaspoon pepper
Cook and stir until cheese melts. Remove from heat and blend in 1/4 cup sour cream.
