    This is a quick, but delicious Black Bean Soup Recipe

    2 T. vegetable oil
    1 onion, chopped
    1 t. garlic, chopped
    1 T cumin
    2 t. chili powder
    3 (15oz.) cans black beans
    3 cups chicken stock
    2 T lime juice
    3 cups chunky salsa, or Rotel tomatoes
    1 small can green chilies
    Few dashes of hot sauce, or dash of cayenne,

    Heat the oil.
    Add the onion, garlic, cumin and chili powder.
    Saute veggie mixture for about 4-5 minutes. Set aside
    PUREE 2 cans of the beans in 2 batches, adding 1/2 of the chx stock to each batch.
    Pour bean mixture into veggie mixture and bring to a good simmer.
    Add the third can beans, lime juice, salsa, chilis and hot sauce or cayenne.
    SIMMER about 30-40 minutes.

    Serve in bowls with sour cream and green onions if you like. Also goo over hot, fluffy rice.
