Dump Soup

  • Dump Soup

    There are many versions of this soup and it has endless possibilities. Here is mine:

    Dump Soup

    1 lg. onion, chopped (about 1 cup)
    2-3 celery stalks, chopped, leave and all
    2-3 garlic cloves, minced

    In a large heavy saucepan, saute the above in a tbsp. of oil (or with a little water if you are watching calories)Then add:

    1 large can tomatoes--I used diced or just mush up the whole ones with my hand
    4-6 cups broth--chicken, turkey, beef, whatever (be careful if using bullion cubes because of salt content)
    1 -2 bay leaves
    2 good sized carrots cut into bite sized pieces
    2-3 cans beans (kidney, romano, pinto, black--whatever you have) rinsed and drained

    Cover and let all this simmer until the carrots are tender. Then add:

    about 1 cup corn (fresh, frozen, drained if canned)
    1 jar or can of tomato pasta sauce
    a handfull or two of small pasta

    (OR--our favourite--1 can of chili )

    Simmer until pasta is cooked, taste and adjust seasoning, serve with crusty bread.

    For a thicker soup, roughly mash one can of the beans before adding to the soup. This soup freezes very well.
    Communicate. It can't make things any worse!

    One year I invited family and friends over for what I call a Dumpbo.
    I made the basic gumbo and each family member brought a pound of seafood to add to it and it was Dee-licious....

      OOOHHH, I would like to have some of that Dumpbo!

      Thought for the day: Handle every stressful situation like a dog. If you can't eat it or play with it, pee on it and walk away!
