  • Easy Cream of Tomato Soup

    Years ago some of the older ladies in town would make homemade soups for a monthly soup kitchen in town. My favourite was this one, Mrs. Kinney was glad to share it with me. I just made it again the other day and I just love it, I hope you do too

    I large can tomatoes (with liquid)
    milk to fill tomato can (I used half 2% milk and half evaporated)
    1 can tomato soup
    minced onion
    minced green pepper
    salt and pepper
    pinch baking soda
    blob of butter

    Lightly fry onions and pepper (amount you like) in small bit of butter till softened. Add in tomatoes and take a hand blender or potato masher and mush up tomatoes a bit, or depending on how chunky you want your soup to be. Add tomato soup, blend in milk and seasonings, taste and adjust if needed. Heat on medium heat, stirring often so milk won't scald, add blob of butter when heated, stir thru.

    I had leftover rice from dinner, so on the seond day I added some to the soup. If anyone has had Campbells Old Fashioned Tomato Rice Soup before, this recipe tastes almost exactly like it.
