  • Pepper Pot Soup

    Pepper Pot Soup:
    Serves 8
    This is a very tasty,rich soup.Also a very old recipe for soup.You can also add crookneck or pattypan squash to this.

    1 lb.beef short ribs
    2 large yellow onions,coarsely chopped
    3 ripe tomatoes,peeled & chopped
    1 large red,orange or yellow bell pepper,seeded & diced
    1 large turnip,peeled & cubed
    1 c.diced potato
    1/2 c.sliced carrots
    1/2 c.corn kernels(Drained canned or defrosted frozen)
    1/4 c.minced celery
    salt & freshly ground black pepper,to taste

    Put the ribs in a large pot & pour water over them till water covers the meat by about 1".Cover & bring to a boil over high heat,reduce the heat & simmer for 2&1/2 hours or till meat is done.

    Remove the meat & let it cool,reserving the liquid in the pot.Discard the beef bones,chop the meat,& return it to the pot.Add the onions,tomatoes,bell peppers,turnip,potato,carrots,corn & celery.Cover & simmer for 1-1&1/2 hours or till veggies are tender.

    Season to taste w/salt & pepper.Serve immediately.
