This is a recipe I got off the foodnetwork.
Simple Squash & Basil Saute
Recipe by George Stella
Prep time: 10 minutes
Cook time: 3 minutes
Yield: 2 servings ( but this can be easily doubled or tripled )
1 tablespoon olive oil
1/4 cup sliced red onion
1 yellow squash, cut into long 1/4 inch slices on the diagonal
1 zucchini, cut into long 1/4 inch slices on the diagonal
1/2 teaspoon kosher
1/8 teaspoon freshly ground pepper
3 cherry tomatoes, halved
1 tablespoon thinly sliced FRESH basil leaves
Heat the oil in a large skillet over medium high heat. Add the onion, squash, zucchini, garlic, and pepper and cook, stirring occasionally, until lightly browned and crisp tender, about 2 minutes. Add the tomatoes and basil and cook stirring, until tender, about 1 minute. Serve immediately.
I put some freshly grated parmesan cheese over it before serving, just a light sprinkling.
