    Brussels Sprouts with Prosciutto:
    Serves 4

    1 lb. fresh brussel sprouts
    2 c. chicken broth
    1/4 c. butter
    1 small onion, thinly sliced
    4 thin slices prosciutto or fully cooked Virginia ham, chopped
    freshly grated Parmesan cheese

    Place Brussels sprouts in a 3 qt. saucepan, add broth & enough water to cover. Heat to boiling, reduce heat. Cover & simmer about 10 minutes or til tender, drain.

    Heat butter in 10" skillet over med-high heat. Saute onion in butter. Stir in Brussels Sprouts & prosciutto, reduce heat. Cover & simmer about 2 minutes or till hot. Sprinkle with cheese.
