    Heart of the South Fried Okra

    1 pound okra
    1 cup cornmeal
    1/2 cup Crisco Shortening or Oil
    salt and freshly ground pepper

    Rinse okra. Remove caps. Cut pods into 1/2 inch slices. Toss with cornmeal. Heat Crisco on med high heat in large (preferably cast iron) heavy skillet. Fry single layer of okra about 8-10 minutes or until golden brown on all sides. Do not overcook or okra will become to soft. Turn carefully. Drain on paper towels. Sprinkle w/ salt and pepper. Fry smaller okra whole.
