    This is one of our favorites.

    Stuffed Parsley Onions

    4 large onions
    4 tablespoons cooked white rice
    1 bunch fresh parsley
    4 tablespoons grated sharp cheddar cheese
    2 tablespoons olive oil
    1 tablespoon dry white wine
    salt and freshly ground black peppers

    Wash, peel and scoop a 1" diameter core in the onions and set aside. Mix all other ingredients into a medium size bowl and moisten with white wine to bind the ingredients. Spoon the mixture into the onions and wrap each in foil. Place on the BBQ for 30-40 minutes, until tender. Garnish with parsley to serve.

    *Can bake in the oven.
