A mixed vegetable dish.
2 zucchinis
1/4 pound fesh green beans
2 tomatoes
1 onion
1 8 oz can whole kernel corn
1 4 oz can chopped green chiles
2 T olive oil
1/4 t salt
Wash and cut up all fresh vegetables.
Drain cans of corn and chiles in a colander.
Heat 2 T oil in Dutch oven over med-high heat.
Add onion and green beans to pan. Lower heat to medium and cover pan.
Cook for 8 minutes.
Add corn and chiles to skillet. Cook and stir for 1 to 2 minutes or until mixture is hot and all the vegetables are tender. Season with 1/4 t salt.
