    Italian Broccoli

    2 lg heads broccoli
    1 med. onion, chopped
    3 cloves garlic, pressed
    3 to 5 T. olive oil
    1 3/4 c. Italian bread crumbs
    1 1/2 c. Parmesan cheese
    2 eggs, beaten lightly
    Crushed red pepper to taste
    Salt & pepper

    Steam or boil broccoli until tender, drain, chop into small pieces. In large skillet, heat olive oil on med-high heat, saute onion. When onion starts to turn brown add garlic & stir, then add broccoli, mix well. Add bread crumbs & cheese, stirring well. Remove from heat and add eggs. Place in a greased casserole & bake at 350 for 30 to 35 minutes.
