    Swiss Scalloped Corn

    5 T butter
    1/2 c Ritz cracker crumbs
    1 c chopped onion
    1/2 c green pepper
    1 (10oz) frozen corn, thawed
    3/4 c evaporated milk
    3 eggs, beaten
    1 c shredded swiss cheese
    salt and pepper to taste

    Melt butter in microwave and add cracker crumbs to 2 T of the butter. Set aside.
    Add onion and green eppper to remaining butter in casserole. Cover and microwave till veggies are tender.

    Stir in corn, evap. milk, eggs, cheese, salt and pepper. Microwave on MED for 8 min or until mixture thickens, stirring every 2 min. Sprinkle w/ crumb mixture and micro MED for 1 min. Let stand on wooden board for 5 min before serving. Serves 4-6.
