    This is worth the time. Wonderful!

    8 Day Sweet Pickles

    Wash and slice 7 pounds of cucumbers. Place in stone crock. Cover with cold water. Add 1 Cup plain salt (do NOT use iodized salt). Weight the cucumbers down with a plate to hold the cucumbers in the brine. Cover the top of the crock with a cloth. Remove the scum that forms in 2 to 3 days.

    4th Day - Drain, rinse and cover with clear cold water. Let sit overnight.

    5th Day - Drain. Boil 4 Cups Vinear, 4 Cups Water, 4 tablespoons powdered Alum. Add cucumber slices, bring to a boil. Drain and rinse once. This solution was just to crisp the pickles. Do not reuse.

    Now boil 1 quart vinegar, 6 cups sugar and 1/2 oz allspice. Pour over cucumber slices. Let set one day.

    Remember to keep weighting down the cucumbers and putting a towel over the top of the crock. Do not use a lid.

    6th Day - Drain juice into saucepan and add 2 cups sugar. Bring to a boil, pour over cucumbers and let sit until next day.

    7th Day - Repeat - drain juice into saucepan and add 2 more cups sugar.

    8th Day - Pack cucumber slices in sterilized canning jars (pints). Do not add sugar on 8th day. Boil solution and pour hot over pickles in jars. Process in hot water bath for 10 min.

    Makes about 11 pints.
