    Preheat oven to 350 and grease a casserole dish

    3 boxes frozen, chopped spinach
    1 or 2 packages dry onion soup mix
    Buttered cracker crumbs (plain soda crackers)

    CREAM SAUCE
    1 stick butter
    1/2 cup flour
    1 cup half & half (add more if necessary)

    Cook spinach until dry. Add soup mix one package at a time and taste to make sure it is not too salty for your taste) Set aside.

    Heat butter in a skillet or pan add the flour making a light roux, and stirring for about 3 minutes. Slowly add the half & half stirring to combine.
    Mix the sauce with the spinach and pour into your casserole dish. Sprinkle buttered crackers over the dish. Bake for about 20 minutes until browned.
