I had TONS of carrots the other night & decided to look for a "cooked carrot" recipe to go with dinner. BTW, DH & I are not big fans of cooked carrots. I found this at cooks.com:
BAKED CARROTS
2 cups cooked carrots
1 can celery soup
1/4 lb. grated cheese
Mix all ingredients together. Pour into a greased casserole dish. Sprinkle buttered crumbs on top. Bake 20 to 25 minutes at 350 degrees.
This was soooooo easy! Left-overs weren't bad, but I've made it twice since & cut the recipe in half (for just the two of us).
