    Harvest Vegetable Bake

    1 head cauliflower
    1/2 cup chopped celery
    1/3 cup chopped onion
    1/3 cup chopped green pepper
    3 Tbsp margarine
    1 Tbsp cornstarch
    1 cup milk
    1 cup shredded swiss cheese
    3/4 tsp salt
    1 tomato, sliced

    Break cauliflower into flowerets and cook in small amount of salted water till tender. Drain and pour into shallow baking dish. In small saucepan, saute celery, onion and green pepper in melted margarine till tender crisp. Add to the cauliflower in shallow baking dish. In same pan used to saute vegetables, mix cornstarch and cold milk. Bring to boil, stirring till thickened. Stir in swiss cheese and salt. Pour sauce over vegetables. Top with sliced tomato and sprinkle with paprika. Bake at 360 degrees for 20 minutes
