cool marinated cucumbers
This special side dish that can be made quickly and left to marinate overnight, then thrown in a salad bowl to add flavor on a summer night's barbecue. It is a favorite among the children that I baby sit and we always eat it with French fries and fried chicken.
Servings: 12 servings
6 medium cucumbers, thinly sliced
1 medium onion, sliced
1 cup vinegar
1/4 to 1/3 cup sugar
1/4 cup olive or vegetable oil
1 teaspoon salt
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon dried marjoram
1/2 teaspoon lemon-pepper seasoning
1/2 teaspoon ground mustard
Instructions:
In a bowl, combine the cucumbers and onion. In a jar with a tight-fitting lid, combine the remaining ingredients; shake well. Pour over cucumber mixture. Cover and refrigerate for at least 4 hours. Serve with a slotted spoon.
