Since it's in season...I thought I'd share this recipe:
Creole Asparagus
1 lb fresh asparagus, cut into 2" pieces
1 T. Olive oil
2 T. minced garlic
1 medium onion, sliced or chopped
1 large tomato, diced
Creole seasoning
Black pepper
1. Bring a pot of water to a boil. Drop in asparagus, and blanche for 2-3 minutes. Drain and rinse in cold water. Set aside.
2. In a 12" non-stick frying pan, warm olive oil on medium heat. Add onions and garlic. Cook for 2 minutes.
3. Place asparagus on top of onions and garlic. Top with diced tomatoes. Add Creole seasoning and black pepper to taste. (I used about 1/2 tsp of each.)
4. Cover and cook for 20 minutes. Do not stir during cooking process!
5. Remove lid and gently toss vegetables together. If there is a lot of liquid, leave the lid off, and cook for another 5 minutes.
This is one of my favorite side dishes!
