Black Bean Salad
2 {16oz} cans black beans, drained and rinsed twice
1/2 medium red bell pepper, chopped
1/2 medium green bell pepper, chopped
1/2 med. onion, chopped
2 med. tomatoes, peeled and chopped
2 stalks celery, diced
1/2 tsp. salt
1/4 tsp. pepper
2 TBsp. red wine vinegar
1/4 c. light olive oil
1/4 c. parsley, {optional}
In medium bowl, combine all ingredients and toss 2 minutes. Refrigerate. Keeps several days.
