    These are delicious! I understand it is a recipe from the 1940's China.

    6 cups cooked, sliced beets or 3 cans sliced beets
    1 cup sugar
    1 cup cider vinegar
    2 T. cornstarch
    24 whole cloves
    3 T. ketchup
    3 T. cooking oil
    1 t. vanilla
    Dash of salt

    Drain the beets reserving 1 & 1/2 cups of the beet liquid. Place the beets is a medium saucepan wiht the reserved liquid and the remainder of the ingredients.
    Mix well, then cook for 3 minutes over medium heat, or until the mixure thickens. Allow to cool, then store in the frig and chill well.
