Buckwheat

We served these at an informal dinner last week-end just as an added dish, and it was a big hit!
Of course I share the good stuff with my CK family!
4 medium sweet potatoes
1/4 cup olive oil
2 large cloves garlic, diced very fine
Creole seasoning, to taste
Put olive oil and garlic in a bowl and allow to sit for about 20 minutes.
Peel potatoes and cut into 3/4 inch chunks
Remove garlic and toss potatoes in the garlic/oil to coat well
Arrange in a single layer on a baking sheet and sprinkle well with the Creole seasoning. Toss to coat, and be sure each piece is in single layer.
BAKE in a PREHEATED 400 degree (hot) oven for about 30-40 minutes until tender.
NOTE:
This dish hold up well at room temp
