Cheese Stuffed Baked Potatoes /Twice Bakes
6 lg. potatoes (baked)
1 8 oz. package cream cheese (softened)
1/2 c. butter (softened)
1 T. chopped green onion
1/2 c. cheddar cheese (shredded)
Salt & pepper to taste
Cut potatoes in half, scoop out insides (reserving skins), mix with above ingredients and fill skins. Sprinkle with paprika, more cheese/green onions. Can add jalapenos too.
Bake 400º for about 20 minutes (until heated through).
*These freeze well too!
