Never know what to do with the broccoli stems? Here is what I do with mine thanks to my father.
Grated Broccoli with Parmesan
Stems from about 2 bunches of broccoli, grated
About 2/3 cup of parmesan cheese, shredded
3 TBS olive oil
Salt
1/8-1/4 tsp red-pepper flakes
Peel and grate the broccoli stems. Heat the oil in a large skillet over medium-high heat and add the grated broccoli and about 3/4 tsp salt. Toss to coat well. Cover and reduce the heat to low and cook until tender. Stir occasionally to prevent sticking. This should take about 10 minutes. Stir in the red pepper flakes and cook another minute. Stir in the parmesan cheese and serve hot.
