    Frites & Spicy Ketchup:
    Serves 4

    SPICY KETCHUP:
    1 c.ketchup
    2&1/2 T.Dijon mustard
    2 T.honey
    1&1/2 T.refrigerated horseradish
    2 tsp.hot sauce
    1/2 tsp.celery seeds
    1/2 tsp.sherry vinegar
    1/8 tsp.salt
    1/8 tsp.pepper

    FRITES:
    2 lbs.baking potatoes
    Peanut Oil
    Kosher salt
    Freshly ground black pepper

    Prepare Spicy Ketchup:
    Combine all ingredients,stirring well.Cover & chill till ready to serve.

    Prepare Frites:
    Using a mandoline,cut potatoes into 3/8" wide strips,leaving skins on.Soak fries in ice water for 10 minutes,drain,& pat dry.

    Meanwhile,pour oil to a depth of 3" into a Dutch oven,heat to 300 degrees.Fry potatoes in 3 batches,4 minutes,drain on a wire rack over paper towels.Arrange potatoes on 2 large rimmed baking sheets.Freeze 1 hour.

    Pour oil to a depth of 3" into a Dutch oven,heat oil to 350 degrees.Fry potatoes in 3 batches,4 minutes or till golden.Drain on a wire rack over paper towels.Sprinkle lightly w/kosher salt & freshly ground black pepper.Serve hot w/Spicy Ketchup.
