Confetti Bean Salad
1 can kidney beans, rinsed & drained
1 can garbanzo beans, rinsed & drained
1 can Italian diced tomatoes, chopped or substitute Mexican Style
1 l/2 cup frozen peas
1 1/2 c. frozen corn
l/2 c. chopped onion
l/2 c. chopped green pepper
3 Tbsp. red wine vinegar
2 Tbsp. canola oil
1 garlic clove minced
l/2 tsp salt
l/2 tsp pepper
Combine first 7 ingredients. Combine dressing ingredients, mix well, pour over veggies, toss gently. Cover & refrigerate. This is better if you make it a day or two ahead.
