  • Hearty Meatless Chili

    Hearty Meatless Chili:
    Makes about 4(2 cup)servings

    1 envelope Lipton Recipe Secrets Onion or Onion-Mushroom Soup Mix
    4 c.water
    1(16oz.)can chick-peas or garbanzo beans,rinsed & drained
    1(16oz.)can red kidney beans,rinsed & drained
    1(14&1/2oz.)can whole peeled tomatoes,undrained & chopped
    1 c.lentils,rinsed & drained
    1 large rib celery,coarsely chopped
    1 T.chili powder
    2 tsp.ground cumin
    1 medium clove garlic,minced

    In a 4 qt.saucepan or stockpot,combine all ingredients.Bring to a boil over high heat.Reduce heat to low & simmer covered,stirring occasionally,20 minutes or till lentils are almost tender.Remove cover & simmer,stirring occasionally,an additional 20 minutes or till liquid is almost absorbed & lentils are tender.

    Note:
    For spicier chili,add 1/4 tsp.crushed red pepper flakes.

    Ingredients. 1-3/4 cups chopped baby portobello mushrooms. 1 medium onion, finely chopped. 1/2 cup chopped sun-dried tomatoes (not packed in oil) 2 tablespoons olive oil. 2 garlic cloves, minced. 1 package (12 ounces) frozen [I]vegetarian[/I] meat crumbles. 2 cans (16 ounces each) [I]chili[/I] beans, undrained.
