  • Mixed Greens w/Seitan

    Mixed Greens w/Seitan:
    Serves 4

    2 T.olive oil
    1 yellow onion,diced
    4 garlic cloves,minced
    1/2 tsp.salt
    2 bunches greens(Kale,mustard or collard greens),4-6 leaves per bunch,trimmed & sliced or 1/2 lb.braising mix
    1/2 lb.seitan,cut into bite-size pieces
    2 T.vegan Worcestershire sauce

    Heat the olive oil in a medium skillet.Add onion,garlic & salt.Cook on medium-low heat for 5 minutes or till onion is translucent.

    Add the greens,a handful at a time,adding more as they cook down.Sprinkle in 2-3 T. water if the greens seem too dry.Cook for 5-10 minutes or till greens are tender.

    Add the seitan & Worcestershire sauce & cook for 5 minutes,till its heated through.
