    Does anyone know how Cheddar's Casual Cafe makes that awesome bourbon glaze that is on the salmon? If not does anyone have a good bourbon glaze recipe for chicken and fish?

    A few Bourbon Glazes

    I was hoping someone had this recipe for you. No luck so far. Unfortunately I have never been to Cheddar's so I am unfamilar with this glaze.
    I have several bourbon glazes that I have collected over the years, none tried, that I will post. I have also included some for Jack Daniel's glaze.
    I know.. I know ...whiskey ... bourbon, two different things, but thought if it sounded good you might sub the bourbon.

    I will keep my fingers crossed that someone has this recipe for you... until then here are a few to check out.

    Bourbon Glaze

    1 cup honey
    1/2 cup molasses
    1/2 cup bourbon
    1/4 cup orange juice or pineapple juice
    2 tablespoons Dijon mustard

    Microwave honey and molasses in a 1-quart glass dish at HIGH 1 minute. Whisk to blend. Whisk in bourbon, juice, and mustard.


    3 tablespoons maple-flavored syrup
    2 tablespoons bourbon
    1 tablespoon soy sauce
    2 crushed garlic cloves
    1 teaspoon Dijon-style mustard

    In a small bowl, stir together maple-flavored syrup, bourbon, soy sauce, garlic, and mustard.

    Apple-Bourbon Glaze

    1 cup apple cider
    1/2 cup light brown sugar, packed
    1/4 cup bourbon
    3/4 cup Dijon mustard
    1 teaspoon ground pepper

    Heat cider and sugar, add bourbon, add other flavorings and use as a glaze.

    Apple-Bourbon Glaze -2

    2 tablespoons unsalted butter
    1 cup yellow Spanish onion, peeled and thinly sliced
    3 cups apple cider
    1 cup apple cider vinegar
    1 cup bourbon
    3 tablespoons honey
    Salt and pepper, to taste

    Heat butter in 2-quart, heavy-bottomed saucepan. Add the onion and saute for 6 to 8 minutes. Add remaining ingredients, reduce by three-quarters, and strain.

    Maple-Bourbon Glaze
    1/3 cup bourbon
    2 tablespoons maple syrup
    1 tablespoon Dijon country-style mustard

    In a small bowl, combine all glaze ingredients. Set aside.


    1/4 cup Jack Daniel's Tennessee Whiskey
    1/4 cup soy sauce
    1/4 cup Dijon-style mustard
    1/4 cup minced green onions and tops
    1/4 cup firmly packed light brown sugar
    1 teaspoon salt
    Dash of Worcestershire sauce
    Pepper to taste

    Combine all ingredients. Blend well. Heat in microwave on high 2-3 minutes.

    Jack Daniels Grill Glaze
    2 heads garlic, roasted w. 2 Tbsp
    Olive Oil
    2 Medium onion, finely chopped
    2 Tablespoons Olive oil
    2 Tablespoons crushed pineapple
    3-1/4 Cups dark brown sugar
    1/4 Cup + 3 Tbs. Jack Daniels Whiskey
    2-1/2 Cups pineapple juice
    1/2 Cup teriyaki sauce
    2 Tablespoons soy sauce
    6 Tablespoons lemon juice
    5 Teaspoons Cider vinegar
    1 Teaspoon Red wine vinegar
    1/4 Teaspoon cayenne pepper

    Cut about 1/2 inch off garlic. Cut so the roots will sit flat. Remove the
    papery skin from the garlic,leave enough so that the cloves will stay
    together. Put garlic into small casserole dish, drizzle with oil and cover
    (or wrap in foil). Bake in preheated oven for 1 to 1 1/2 hours at 325

    Remove garlic & cool. Squeeze out garlic and mince.

    Sauté onion in olive oil until caramelized. Add garlic and cook about 1
    minute. Add crushed pineapple and cook another minute . Add brown sugar and stir until melted.

    Combine Jack Daniel's, pineapple juice, teriyaki sauce, soy sauce, lemon
    juice, both kinds of vinegars & cayenne pepper with onion/garlic mixture.
    Stir occasionally until mixture boils then reduce heat until mixture is just simmering & cook for 1/2 hour.

    Let mixture simmer until sauce has reduced by at least 1/2, until thick and

      I just had this last night with the grilled chicken and shrimp. I taste and found pickled Ginger, taste soy sauce and I believe they have cooked the bourbon down to sweet syrup 1st then add
      Ginger and soy. I will be experimenting !

        Restaurant's bourbon sauce can be replicated

        Dear Janet: I had never enjoyed this particular dish, so I made a trip to the restaurant and tried it.


        Since the exact recipe is a proprietary secret, I experimented in my kitchen until I came up with a glaze that should come pretty close to what you're looking for. (Someone owes me for dinner plus tip. And drinks!)

        BOURBON GLAZE (Similar to Cheddar's)

        * What you'll need:

        2 tablespoons molasses
        2 tablespoons teriyaki marinade
        1 teaspoon fresh lemon juice
        1 teaspoon minced onion
        1/4 teaspoon minced garlic
        1/4 teaspoon bourbon
        Dash of cayenne pepper

        * How to do it:

        Combine all ingredients in a small saucepan and heat briefly. This will make about 1/4 cup, enough to glaze 1/2 pound salmon.
