  • New to Copykat/need grill recipes

    Hi, This seems like such a great site. I just joined tonite. Hello to all. We never do much grilling outside...but we bought a new gas grill and am in need of some things to make. Anything. We want to try it out on Saturday nite. It is so hot here in Texas...I am determined to cook out alot this year but in need of any tips. I know nothing about outside cooking. Any help out there. Thank you so much. love all recipes

            Grilled Lime Chicken

            Servings: 8

            Ingredients:

            8 chicken breast halves, skin removed
            1/2 cup lime juice
            1/3 cup olive oil
            4 green onions, chopped
            4 cloves garlic, minced
            3 tbsp. fresh dill, divided
            1/4 tsp. pepper

            Instructions:

            1. Pound chicken breasts to flatten.
            2. Combine lime juice, oil, onions, garlic, 2 tbsp. dill and pepper in a resealable plastic bag.
            3. Add chicken; seal, refrigerate 2 to 4 hours.
            4. Drain, discard marinade.
            5. Grill chicken, uncovered, over medium-hot coals for 12 to 15 minutes, until tender and juices run clear.
            6. Turn after 6 minutes.
            7. Sprinkle with remaining dill before serving.




            Grilled Roasted Red Potatoes

            Servings: 4-6

            Ingredients:

            1 pkg. red potatoes
            1 Reynold's Hot Bag Extra Heavy Duty Foil Bag
            2 tbsp. rosemary, freshly chopped
            1 tbsp. parsley, freshly chopped
            1/4 tsp. salt
            1/4 tsp. pepper
            1/4 tsp. garlic salt
            3 tbsp. whole butter sliced into thin pats or 1 tbsp. oil

            Instructions:

            1. Preheat grill the medium high.
            2. Open foil bag.
            3. Place 1 package of red potatoes inside foil bag.
            4. Add the rosemary, parsley, salt, pepper, garlic salt and butter.
            5. To seal, double fold open end of foil bag.
            6. Shake foil bag to combine all ingredients.
            7. To cook, slide foil bag onto support pan and place foil bag onto grill.
            8. Grill 12 minutes on medium high heat on each side.

            I use regular reynolds wrap and make my own pouch, and russet potatoes with whatever herbs you like, some butter, YUM!

              Hidden Valley Grilled Chicken

              Servings: 4

              Prep. Time: 10 minutes

              Ingredients:

              1 pkg. Hidden Valley Ranch dressing mix
              1/4 cup olive oil
              1/4 cup vinegar
              4 boneless skinless chicken breasts

              Instructions:

              1. Combine ranch dressing mix, olive oil and vinegar in large, sealable plastic bag.
              2. Add chicken breasts and marinate in the refrigerator for at least one hour.
              3. Grill on medium hot coals for approximately 10 minutes or until juices run clear.

                Backyard Barbecue Spareribs

                Serving Size : 4


                Amount Measure Ingredient -- Preparation Method
                -------- ------------ --------------------------------
                4 pounds pork spareribs
                1 cup catsup
                Salt and pepper -- to taste
                1/4 cup Worcestershire sauce
                1 1/2 cups cherry cola soft drink
                1/4 cup vinegar
                2 teaspoons paprika
                2 teaspoons chili powder
                1 medium onion -- finely chopped

                Cut ribs into serving-size pieces and place on grill over grey-white coals. Slowly cook 1 to 1 1/4 hours, turning often. Combine remaining ingredients in a saucepan and simmer 10-15 minutes. Brush ribs generously with sauce and continue to cook, about 30 minutes, basting and turning often.

                  We bought metal kabob sticks and love using them. all we do is marinate meat chunks we cut up, usally overnite then chunk up your favoriite veggies...any and all will work, we even do tomato chunks! grill until done and serve over rice. easy and minimal clean up.

                      Roasts?

                      I know people cook whole chickens (w/beer in them) on the grill can you do the same for a roast?

                        I am new to the site, too, and have already found lots of great recipes. Too bad I only look at recipes and hardly ever make them. To me, it's a little like reading fiction! My hubby is the cook, so I can pass these off to him.
