    Shrimp Scampi

    1 stick of butter
fresh chopped garlic -- we like alot -- 4 or 5 cloves / 2lb of shrimp, approx.
    1/4 c fresh chopped parsley
juice from half of a lemon
white wine - opt.- splash or 2

2lbs of fresh shrimp, shelled w/ tails on
(can also use half shrimp and half scallops)

Melt butter (do not brown) and add shrimp and cook till they turn pink. Remove to platter and cover to keep warm, leaving the butter and juices in the skillet.

Add more butter -- if needed -- and melt. Add fresh garlic, parsley, splash of wine and squeeze of lemon and just cook for a minute or two.

Pour over the shrimp and serve immediately. May want to give it a grind of fresh pepper. This is YUM!!!
