  • Garlic Sauce

    I went to a chinese buffet recently and they had blue crabs in a garlic sauce. I can't seem to find a recipe for this. Does anyone have one to share???

    This sauce says it is for soft shelled blue crabs

    1 T. peanut oil
    4 cloves garlic, minced
    1.5 T. grated fresh ginger
    1 bunch scallions, white and light green parts only, chopped
    1/2 c. dry white wine or rice wine
    2 T. light or regular soy sauce
    2 T. rice wine or dry sherry
    1 t. sugar
    1 t. white wine vinegar

    Heat the oil in a large, heavy saucepan over medium heat. Add the garlic and ginger and saute till transparent, about 3 minutes. Do not allow mixture to burn. Stir in the scallions and saute 1 minute more. Add remaining ingredients and cook 1 minute longer. This sauce may be served hot or at room temperature.

    Yield about 1 cup
