  • Can I substitute milk for half&half?

A recipe for au gratin potatoes calls for half & half, but this is something I would never have on hand - can I sub for something else?

It won't be as rich but you can substitute milk for half and half. You can basically substitute any liquid for any liquid (depending on taste).

Also, to replace fats in baked goods you can substitute any kind of mashed fruit/puree for most of the oil in the recipe. I like to substitute banana in chocolate cakes for the oil.

If you have canned milk, it is a little richer than fresh milk. I sub that all the time for half and half.
