  • Dressing for fruit salad

    Help! Have friends coming for lunch on Thurs - they are on a diet at the moment - so am keeping the lunch light - thought a fresh fruit salad for dessert might be nice - does anyone have a tasty low cal dressing that will work well with the fresh fruit Im using (strawberries, raspberries, blackberries and what ever else looks good in the market). They are off alcohol too!

    Here is the sauce I use. I'm sure you could substitute splenda

    2 c. water
    1 1/2 c. sugar
    3 T fresh lemon juice
    2 T anise seed
    1/2 t. salt

    Heat incredients in a sucepan at medium heat for 15 minutes or until a light syrup forms. Cool, strain and pour over fruit selected.

      1 jar marshmallow creme
      1 block cream cheese (I use neufatchel)
      1/2 tsp vanilla

      Stir do not put in a blender.

      You might want to double the recipe, it goes fast!

        Plain yogurt with some honey and cinnamon stirred into it. It's great as a fruit dip so would work as a dressing I would think.

          Vanilla yogurt is very good in a fruit salad.

              This or the vanilla yogurt are good ideas.

              Personally, I just pour a little orange juice over it. With those delicate berries, I would leave them as au natural as possible and serve a dressing on the side.

                Honey Sauce
                1/4 cup pineapple juice
                1/4 cup lemon juice
                1/4 cup honey
                dash cinnamon ground
                Mix ingredients in a bowl. Chill. Serve over fresh fruit. Makes
                3/4 cup.

                  Thank you for all the choices - I ended up just using the orange juice - worked lovely with the delicate fruits - the other recipes I have copied for future use. Thanks again!

                    a Poppyseed salad dressing is always a good standby too
