  • Red Onion and Jalapeno Marmalade

    Hi,

I went to the restaurant Canyon Cafe (www.canyoncafe.com) in St Louis, MO...i believe they have locations in Phoenix and somehwere in texas also. Anyway, I am looking for a recipe similar to their red onion marmalade...their's is tart and very sweet and I can't seem to get it to work. Any help would be great.

I found this......looks like what you are looking for.

    Red Onion Marmalade:
1 lb. Red onion, sliced thin
    zest of 1 orange
    1/3 c. Red wine vinegar
    1/3 c. Raspberry vinegar
    2/3 c. White sugar
    1 Jalapeņo, diced

place vinegar and sugar in a saucepan and bring to
a boil. Add onion and zest. Cook until almost dry (1/2 hour) stirring
occasionally. Fold in jalapenos and let cool.

I believe there is a Canyon Cafe in Denver. Does anyone have a recipe for the sauce/dip they use for the breadsticks, or am I thinking of the wrong restaurant?
