  • Need help with "dough conditioner", please

    I have a recipe for a certain kind of yeast roll that calls for "dough conditioner". Does anyone know what this is and where I can get it. Went to my local bakery department at Shoppers Food Warehouse and they didn't seem to know what it was. All their stuff comes already measured in a big bag and they just add the warm water and let their Hobart mixer do the rest. I'm a very amateur baker of bread/rolls so any advice you care to share will be sooooo appreciated. TIA!

    I'd never heard of it so of course I had to google it. It is generally used by professional bakers and more in Europe than here in North America.

      I buy it at Wal-Mart. Its called "Vital Wheat Gluten". Its made by "Hodgson Mill".

          Well, you learn something new every day! I use wheat gluten in my breads but have never heard it called dough conditioner.
