  • Chicken Enchiladas

    I am looking for an enchilada recipe that doesn't have a strong dark red sauce. More like a relleno sauce .Would be interested in using one of the cresam soups to give it a milder taste. Any suggestions would be greatly appreciated.

      I like green enchilada sauce on my chicken enchiladas, this is how I make mine.

      Sour Cream chicken enchiladas
      3c cooked diced/shreded chicken
      8oz sour cream
      4oz can diced green chilies
      4 green onions, diced
      1 sm. can sliced black olives
      1 can green enchilada sauce
      cheddar cheese
      flour tortillas
      salsa and sour cream for topping

      Combine chicken and sour cream, can add extra chiles and onion if prefer. put 1-2 tbsp chicken mixture in tortilla roll and place in baking dish. pour can of enchilada sauce over enchiladas, sprinkle green chile's, green onions and black olives over enchilada sauce, top with cheese, bake until bubbly, aobut 30-45 min, 350.


      can add or subtract anything you want. real versitile recipe.
