  • Cast Iron Skillet recipes please?

    I got a beautiful 10lb. enameled cast iron skillet for my BD. I have never cooked in one before. What is your fav dish to cook in one? And,,,,the best way to look after the skillet. Mine has a lifetime warrenty.

    Cornbread and fried taters are the best when made in cast iron skillets hands down! just use your recipe ...I will be back to see everyones recipes

      I don't know how different enameled cast iron skillet verses the black cast irons, but one thing I know is to never wash with soap. And dry on the stove burner to avoid it from getting rusted.. You'd treat it like a wok after it's seasoned properly.

        I used to make my Pineapple Upside Down Cakes in a cast iron pan.

        It is heavy to turn the cake over onto a cake platter though, but it sure made a good
        cake.

          Kaci - did you cook your Pineapple Upside Down Cake on the stovetop or in the oven?

          What temp for stovetop or oven? How long did you cook?

            Some things just *must* be made in a cast iron skillet!

            Fried chicken
            Cream gravy from the drippings
            Fried taters w/bacon and onions
            Sausage gravy
            And the best steaks ever!

            Preheat oven to 350F
            Get cast iron skillet good & hot, put seasoned steak(s) in... 2 minutes per side. Put whole skillet in oven, do steaks another 2 minutes per side... put them on a plate and cover. Allow to sit in juices 5-10 minutes before eating...... I am talking Y-U-M-M-Y!!!!!!!!!!!

            We also do a "One Pan" in the skillet when camping - brown bacon or sausage, dump in a bunch of eggs and scramble all up. Add onions, green, yellow and/or red peppers and anything else that tickles your fancy. Melt cheese on top right before serving.

              The enamel coating over the cast iron prevents rusting, eliminates the need to season the metal, and allows for more thorough cleaning.
              I use my enameled skillet and dutch oven for just about every dish from meats to stews.

                I was all set to do home fries in the pan tonite, then realized it was recommended to oil and season, put skillet in oven 350 degrees for 1 hour before using~~next time! Thanks again

                  I always cook a roast in my larger enameled iron skillet. I have a smaller pot that I use for peas, potatoes and pretty much anything else.

                        Use salt, preferably the coarse Kosher, as a 'scouring' medium. Just dump some salt in the pan and use a dry cloth or even a paper towel to scrub the pan - NO water. Keep going until you've cleared the rust. Then dampen a paper towel with oil and 'clean' the pan with that.

                              Peanut Brittle

                              This is a really good recipe but be sure to use raw peanuts. Roasted peanuts will burn (been there done that not good). One other way that might work is to add the peanuts at the very end but I have never tried that so not sure if that will work.



                              Peanut Brittle

                              1 cup sugar
                              1/2 cup light karo syrup
                              1/2 cup water
                              2 cups raw peanuts
                              1 teaspoon butter
                              1/2 teaspoon vanilla
                              1 teaspoon soda


                              In a large cast iron skillet on medium heat cook sugar, syrup, and water until soft ball stage (240 degrees). Add peanuts stirring constantly until hard crack stage (300 degrees). Remove from heat and quickly add butter, vanilla and soda. Stir until it is well mixed. Pour on a buttered aluminum foil sheet. Thin to a single peanut thickness, cool. For more candy repeat the process.
