  • Chocolate Zucchini Bread

    I'm looking for a good recipe for chocolate zucchini bread. Are there any out there? Thanks!!

    I just got done making 2 loaves of this as I type:

    CHOCOLATE ZUCCHINI BREAD

    3 eggs
    3/4 C vegetable oil
    1 1/2 C sugar
    2 tsp vanilla extract
    3 C zucchini, grated
    1/2 C nuts (optional)
    1 tsp cinnamon
    1 tsp salt
    2 tsp baking soda
    1/2 tsp baking powder
    2 1/3 C flour
    1/2 C unsweetened cocoa

    Combine all liquid ingredients. In another bowl, combine dry ingredients stir to mix. Add dry ingredients to wet, stirring to combine. (the dough will be stiff)

    Add zucchini and nuts, stir to mix.

    **Baked in 2 greased loaf pans at 350 for 45 minutes.

    Cool for 15 minutes and remove from pan.

    ** I use parchment paper in the pans instead of greasing them. It makes them come out alot easier.

      can you taste the zucchini in this bread? I tried a bread that I found in the Taste of Home booklet and I could taste the squash too much. I love the idea of putting vegetables in bread, but I do not want it to taste like squash.

        I can't taste it at all, and my youngest son (he hates everything) was totally surprised when he found out it had zucchini in it

        The only thing the zucchini does is make it moist.
