    Hi...
    I'm looking to make individual mini cheesecake using a mini or regular size muffin pan, would anyone have a recipe for these? I would like to put different topping on the top (etc. like maybe blueberry or cherry pie filling) wanting to make for a camping get together BBQ for this week-end.

    I just made these over the weekend and they were so easy and good.

    INDIVIDUAL CHEESECAKES

    2 (8 oz.) cream cheese, soft
    3/4 c. sugar
    2 eggs
    1 tsp. vanilla
    1 tbsp. lemon juice

    Also:

    Nabisco Nilla wafers
    Pie filling of your choice
    cupcake baking cups, recommend foil but paper will work.

    Beat ingredients until smooth and creamy. Put a Nilla wafer in each foil cupcake baking cup. Fill foil cupcake baking cup about 2/3-3/4 full. Bake at 350 degrees for 20 minutes or until cheesecake springs back when touched. Let cool. Top with pie filling. Makes 16-20 individual cheesecakes.

            I just use the same recipe I do for a regular cheesecake but put the crust into the muffin tins and then top with everything. I noticed that they are now making the graham cracker crusts in the individual sizes and you get 6 per package I believe. Good luck with your desserts.
