    Friend of ours made a peach cheesecake this weekend that was so light and delicious.
    Said it was a prize winner from some magazine. Was with a graham cracker crust and canned peaches. Anyone know where I could find this. I know I could ask her for the recipe but would probably take me a couple of weeks to actually get it. She doesn't have a computer and by the time she wrote it and sent it to me it would be another week or so....or more.

    I don't have a recipe, but if you get it please post it. In the meantime this is our favorite summer dessert using fresh peaches.I got it many years ago from my DD.



    Peach Delight ( Michelle's )

    1 cup flour
    1 stick margarine, softened
    1 cup chopped pecans
    8 ounces cream cheese
    1 cup powdered sugar
    2 cups whipped topping, and additional for topping
    1/2 cup sugar
    2 Tbsp. cornstarch
    1/2 cup water
    2 Tbsp. peach JelloŽ
    1 quart sliced fresh peaches


    Preheat oven to 350° F.

    Mix softened margarine well with flour and pecans. Spread in a 9 x 13 baking pan and bake for 20 min. Let cool.

    Blend cream cheese and powdered sugar; fold in whipped topping. Spread on cooled crust.

    Mix sugar, cornstarch, and water; cook until mixture thickens. Add Jello, stir and let cool. Add peaches. Spread over cream cheese layer.

    Top with more whipped topping.
