    Cuban Chicken and Yellow Rice


    Make a one-skillet meal for the whole family! This dish is flavorful and never boring. Best of all it uses ingredients you can keep on hand for a quick weeknight meal!

    Serving: 4
    Prep Time: 10 minutes
    Cook Time: 35 minutes
    Total Time: 45 minutes





    2 tablespoons canola or olive oil
    4 boned chicken thighs (about ¾ pound)
    ½ teaspoon salt
    ¼ teaspoon freshly ground black pepper
    3 ½ cups hot water (faucet hot)
    1 medium-sized garlic clove, minced
    One 10-ounce package yellow (saffron) rice mix
    Half of a 1-pound package frozen green peas (do not thaw)
    2 roasted bell peppers (from a jar), halved or quartered lengthwise





    1. Heat oil in large, deep, heavy skillet over moderately high heat 2 minutes. Add chicken and brown lightly on both sides, 5 to 8 minutes. Lift to plate, sprinkle with salt and black pepper, and reserve.

    2. Pour water into the skillet, add garlic, and bring to boiling. Add rice, then stir or tilt skillet to spread rice. Lay chicken on top, bring to gentle boil, cover, and cook until liquid is absorbed and rice is tender, about 20 minutes.

    3. Spoon peas on top, in piles or random pattern, then add red peppers. Cover and cook just until peas are heated through, 3 to 5 minutes.

    4. Taste for salt and pepper, adjust as needed, and serve.

      I have made this recipe with yellow rice before but I am not a fan of yellow rice as is DH so I prefer with white.

      This was a recipe passed down to my mom - so there are not any real measurements.

      Chicken (what ever you prefer - tenderloins, thighs, boneless breasts)
      2-3 tablespoons of butter (depends on how much chicken you have)
      2 - 3 stalks of celery - diced
      1 medium onion - diced
      1 can whole peeled tomatoes with juice
      dash of worchestershire
      salt & pepper
      rice
      water

      Season chicken with salt & pepper and brown chicken in butter, remove from skillet. Add celery & onions and saute for a couple of minutes. Add all other ingrediants and top with chicken. Simmer until rice is done.

        Cuban Chicken w/ Yellow Rice

        2 TBS canola or olive oil (I use olive oil)
        4 boned chicken thighs, breasts OR pork chops (approx 1 pound)
        1/2 tsp salt
        1/4 tsp pepper
        3-1/2 cups hot water
        1 medium garlic clove, minced
        1 (10-oz) package/tube yellow (saffron) rice
        Handful frozen green peas OR sugar snap peas (do not thaw)
        2 roasted peppers, chopped OR large jar diced pimentos

        Heat oil in a large, deep skillet over medium-high heat until hot. Add chicken (or pork chops) and brown lightly on both sides, 5 to 8 minutes. Transfer to a plate, sprinkle with salt and pepper and cover with foil to keep warm.

        Carefully pour hot water into skillet. Add garlic and bring to boil. Add rice and stir. Add chicken (or pork chops) on top of rice and bring to gentle boil. Cover and cook until liquid is absorbed and rice is tender, about 20-25 minutes.

        Place peas on top of rice and meat and the add red chopped peppers. Cover and cook for about 5 more minutes.

        NOTE: I tried something a bit different the last time I made this and decided to marinate the chicken in a Cuban-style marinade prior to pan searing. This marinade recipe comes from the Bon Appetite site.

        Cuban Marinade

        1/4 cup fresh lime juice
        1/4 cup chopped fresh cilantro stems (I used dried)
        2 tablespoons olive oil
        1 tablespoon finely grated lime peel
        1 tablespoon chopped fresh thyme (I used dried)
        2 teaspoons chopped seeded jalapeño chile (I used med heat crushed red pepper flakes)
        2 teaspoons Hungarian sweet paprika
        2 teaspoons ground black pepper
        1 teaspoon ground cumin
        1/2 teaspoon salt
        1/4 teaspoon ground allspice

          I usually make the cuban style yellow rice and chicken. I usually add chopped onions and I use chicken broth instead of water.
