    Jewels:

You have a recipe for Chicken Manicotti in Archives and within that thread you mention you are going to make chicken cream puffs. Just wondering if that's a recipe you could post too! By the way, I'm hoping to try the Manicotti soon. Sounds really good! Thanks!

Cream Puffs (FOR SAVORY PUFFS ONLY!!)

                1 cup chicken broth
                1/2 cup butter or margarine
                1 cup Gold Medal® all-purpose flour
                4 eggs

                1. Heat oven to 400ºF. In 2 1/2-quart saucepan, heat chicken broth and butter to rolling boil. Stir in flour; reduce heat to low. Stir vigorously over low heat about 1 minute or until mixture forms a ball; remove from heat. Beat in eggs, all at once; continue beating until smooth.

                2. On ungreased cookie sheet, drop dough by slightly less than 1/4 cupfuls about 3 inches apart. Bake 35 to 40 minutes or until puffed and golden. Cool away from draft, about 30 minutes. (ACTUALLY, I USE A MINI MUFFIN TRAY AND DROP INTO THAT!)

                3. Cut off top third of each puff and pull out any strands of soft dough. Fill puffs with filling; replace tops. Cover; refrigerate until serving. Store covered in refrigerator. (I JUST CUT MINE IN HALF WITHOUT GOING THROUGH AND PULL STRANDS OUT...FILL AND SHUT...MUCH LESS TIME CONSUMING!)

Jewels, I am glad you are feeling better Am I confused here. I don't see a filling??? The only ingredient I don't see used is the chicken broth. I am probably overlooking something so if I am please accept my apology in advance.

Edited it!! Ususally they are made with water, but I use chicken broth in the savory ones.

Cindy...I use these puffs and stuff chicken salad into them.

Here's the filling to the manicotti that I used in the puffs:

2 packages (3 ounces each) cream cheese, softened
1 cup (8 ounces) sour cream
                        1/4 cup minced fresh parsley
                        1/2 teaspoon salt
                        1/4 teaspoon pepper
4 cups cubed cooked chicken ( Ishredded mine in my mini food chopper!) Much creamier product in the end!)
                        1 medium onion, finely chopped
                        1 tablespoon butter

                        DIRECTIONS

In a large mixing bowl, beat cream cheese until fluffy. Beat in the sour cream, parsley, salt and pepper. Stir in chicken. In a small skillet, cook onion in butter until tender; add to chicken mixture.

I've made savory puffs before and used an assortment of salads - chicken, of course as well as shrimp, ham and even tuna - for showers and such.

When I saw Chicken Cream Puffs, I thought.... eeeeeew! Gross!! But after reading the recipe, they sound wonderful. I was thinking the filling was sweet like a cream puff filling. That would be gross.
