  • Pineapple dessert recipe

    Hi, I'm actually looking for a specific recipe, but if you have a really good pineapple dessert, I'd love it if you'd post it!!!

    I had a dessert the other day made with crushed pineapple and it was creamy, but I can't tell what it was mixed with. It had a bottom that was crushed nuts possibly. It was so hard to tell what it was exactly. It was made in a 9x13 pan and was refrigerated. We ate it a little warmer than we should have, but the consistency was not a bar, more loose. Sorry that my description is so poor, but as much as I like pineapple, I'd love any recipes! Thanks!

    These are good:


    No Bake Pineapple Cream Pie

    Ingredients:

    * 1 1/2 teaspoons unflavored gelatin
    * 2 tablespoons cold water
    * 1 can (20 ounces) crushed pineapple, drained
    * 2 cups heavy cream, whipped
    * 20 graham crackers
    * maraschino cherries for garnish, if desired

    Preparation:
    Soften gelatin in cold water; dissolve over hot water; stir in drained pineapple. Chill until partially set. Fold in half of the whipped cream. Spread a layer of pineapple mixture over each of the graham crackers. Line crackers up on their edges, sticking one cracker with spread to the last, to form a loaf. Frost loaf with remaining whipped cream. Arrange sliced cherries into flower shapes and garnish top, if desired.

    Baked Pineapple Pudding Recipe

    Ingredients:
    3 eggs, beaten
    1/2 cup butter
    1 cup white sugar
    1 can (20 ounce size) crushed pineapple with juice
    1/2 cup milk
    4 cups soft bread cubes
    1/4 teaspoon vanilla extract


    Directions:

    Preheat oven to 375 degrees F.

    In a mixing bowl, cream together butter and sugar. Add eggs, milk, pineapple and juice, bread cubes, and vanilla. Mix together. Bake in a 2 quart casserole dish for 45 minutes.

    Pineapple Refrigerator Dessert

    Ingredients:

      Thanks FloridaGirly for posting. I love those recipes. But after thinking a little more, I'm almost sure the specific recipe I'm looking for had oatmeal in the crust. Maybe oatmeal with something else, like nuts or brown sugar. I just don't know!!! I've never made a crust like this but I suppose it's just as simple as making a graham cracker crust. Anyways, I'll keep trying to figure it out!

        Pineapple Oatmeal Bars


        1 1/2 cups Sugar
        2 tablespoons Cornstarch
        2 1/4 cups Pineapple, crushed and drained
        1 1/2 teaspoons Lemon juice
        2 1/4 cups Oats, quick-cooking
        2 1/4 cups Flour
        1 1/2 cups Brown sugar, packed
        3/4 teaspoon Baking soda
        1 cup & 2 teaspoon Butter


        Filling-Simmer first 4 ingredients over medium heat, until thick.
        Remove from stove and cool.
        Crust- Combine dry ingredients and cut in butter. Blend until crumbly.
        Press 2/3 of the mixture firmly in a 9 x 13 pan. Add filling and
        sprinkle remaining crust over the filling.
        Bake 350 for 30 minutes.

          A sweet lady at the church I attended growing up used to make these for potlucks and church dinners. She once gave me the recipe on a card, which I've long since misplaced, but I had copied the recipe into another cookbook and have made it many times. Every time I take these bars somewhere, people ask for the recipe. They're also great made with zucchini pineapple (the recipe is also posted here on the zaar, by another chef). I like to cut the sugar down by at least 1/4 cup, because the pineapple is sweet enough, and I've always made these with real butter. Quick oats or old-fashioned will work, but the old-fashioned does make it a little more challenging to press the crust into the pan. I intend to try a mixture of the two at some point, but haven't ever done it. These would be great for a bake sale, potluck, or gifts. The crust does tend to be a little soft, so I'd be sure to package with something firm underneath, rather than just wrapping in plastic. I've seen other recipes that add nuts, coconut, etc. I'm sure that would be great as well, but this is just the basic, buttery, oatmeal and brown sugar crust and topping. Yum!
          SERVES 24 (change servings and units)

          Ingredients
          1 (20 ounce) can crushed pineapple (Do NOT drain)
          1 cup sugar
          3 1/2 tablespoons cornstarch
          1 3/4 cups oatmeal
          1/4 teaspoon salt
          1 cup brown sugar
          1 1/2 cups flour
          1 teaspoon baking powder
          3/4 cup butter or margarine, softened


          Directions
          1For the filling, combine the sugar and cornstarch in a saucepan and mix well. Add the pineapple and its juice, and cook over medium heat until thickened, stirring constantly. Cool.
          2For the crust, combine oatmeal, salt, brown sugar, flour, and baking powder together. work in butter until mixture is uniform.
          3Reserve 1 1/4 cup of crumb mixture, and press the rest into an ungreased 9 x 13 pan, working up edges just slightly to help hold filling off of the edge of the pan.
          4Pour filling over oatmeal mixture and spread evenly.
          5Sprinkle reserved crumbs evenly over filling.
          6Bake at 350 for 20 minutes. cool and cut into bars.
