Jules, if your DH likes spicy stuff, this hummus recipe will probably be right up his alley. I gotta warn ya tho....it makes ALOT but it's so good!
Smoky Chipotle Hummus
"Wonderful for entertaining, this high volume hummus recipe is made with chipotle pepper, roasted red peppers, and sun dried tomatoes. The Middle-Eastern-inspired dip is a beautiful color and has a smoky, bright flavor. Serve with pita chips and fresh vegetables."
INGREDIENTS:
2 (15.5 ounce) cans garbanzo beans, drained
1/2 cup water
1/4 cup tahini (sesame-seed paste)
1/4 cup fresh lemon juice
2 tablespoons olive oil
1 canned chipotle pepper in adobo sauce
2 cloves garlic
1 1/2 teaspoons cumin
1 (7 ounce) jar roasted red bell peppers, drained
6 oil-packed sun-dried tomatoes, drained
1/2 cup chopped cilantro
1/2 teaspoon salt
ground black pepper to taste
DIRECTIONS:
1. Place the garbanzo beans, water, tahini, lemon juice, olive oil, chipotle pepper, garlic, and cumin in the bowl of a food processor; blend until smooth. Add the red peppers, sun-dried tomatoes, cilantro, salt, and pepper. Pulse the mixture until the ingredients are coarsely chopped into the hummus base. Transfer to a serving bowl, cover, and chill until ready to serve.

Jules, I posted a recipe under appetizers "Lemony White Bean Dip" that is fabulous. I make it all the time! The key is to be sure to drain & rinse beans and use fresh lemon juice and good olive oilIt's quick & easy! Better if made a few hours in advance or the night before. Also, I use a combination of canned garbonzo beans and great northern. Hope that you try it

Black Bean Hummus
I brought 3 types with us on vacation to share with our extended family who are hummus fanatics. I brought the black bean hummus, Emeril's regular hummus & Rachel Ray's spicy hummus. They loved them all but the favorite, hands down, was the black bean one. Enjoy! ~Kathy
5 Star! - Black Bean Hummus
"This hummus comes with raves attached to it. What we like is that everything goes into the food processor and is swooshed into a fabulous consistency.
1 clove garlic, minced
1 (15 oz.) can black beans; drain & *reserve liquid
2 tbsp. lemon juice
2 ½ tbsp. tahini
1 tsp. ground cumin
1/2 tsp. salt
1/4 tsp. cayenne pepper
Add 2 tbsp. reserved liquid, lemon juice, tahini, cumin, salt, & cayenne pepper.
Process until smooth, scraping down sides as needed.

Q-Yummus Hummus
Serves 6
1 can of Chickpeas/Garbanzo Beans, drained
1/4 C. of Olive Oil
2 Tbl. of fresh Garlic
2 Tbl. of Tahini (Ground Sesame Seed Paste)
Juice of 1 large Lemon Juice
1 tsp. of Cumin
1 Tbl. of Salt
Pita Chips or Pita Bread
- In a blender, place all ingredients in except olive oil and pita chips
- Blend ingredients well and slowly add olive oil
- Pour blended mixture into serving bowl
- Serve with pita chips or pita bread
