  • Cucumbers

    My neighbors firend has a garden and my refrig is now full of beautiful organic cucumbers. I love cucumbers but am running out of ideas. I make the sweet/sour cucumbers with sugar, vinegar, onion and pepper ... what else can I make? any ideas?

    I have heard people talk about grilling them but I never have.
    How about making pickles?

        Cucumber Salad

        Ingredients
        3 large cucumbers, thinly sliced
        2 teaspoons salt
        3 tablespoons fresh lemon juice
        1 tablespoon vegetable oil (I used olive oil)
        1 tablespoon sugar
        2 tablespoons chopped fresh dill
        1/2 cup thinly sliced red onion

        Directions
        1. Toss cucumber with salt in large bowl. Cover with plate that rests
        directly on cucumbers; weight down with 1-pound can. Let stand 1 to 2
        hours. Drain in colander; rinse well.

        2. Combine lemon juice, oil, sugar, and dill in serving bowl. Mix in
        onion and cucumber. Refrigerate overnight. Serve cold or at room
        temperature. Makes 10 servings.

        I cannot tell you how many times I have made this. It is excellent on salads, on Greek pizza and in wraps.

        I do up the garlic to 3 or 4 cloves, 2 cukes add a dash of salt, cracked black pepper and dill weed. YUM!

        Serving Size: 8

        Ingredients:
        1 cup cucumber, pared -- seeded
        1 cup mayonnaise (light- low fat)
        1 garlic clove -- minced
        2 tablespoons parsley -- minced
        1 tablespoon chives or scallions -- minced
        1 cup yogurt -- plain non-fat


        Cooking Directions:

        Stir together cucumber, mayonnaise, garlic, parsley, chives and pepper.
        Fold in yogurt. Chill. Makes approximately 2 3/4 cups

        This ROCKED! I added some fire roasted red peppers and everyone loved it.

        Cool Cucumber Pasta Salad

        8 ounces tube pasta (I used Pipette)
        1 tablespoon vegetable oil (I used olive oil)
        2 medium cucumbers, thinly sliced
        1 medium onion, thinly sliced
        1 1/2 cups sugar (I used 1 1/4 c.)
        1 cup water
        3/4 cup vinegar
        1 tablespoon prepared mustard
        1 tablespoon dried parsley flakes
        1 teaspoon salt,
        1 teaspoon pepper
        !/2 teaspoon garlic salt

        Cook the pasta according to package direction: drain and rinse in cold
        water. Place in a large bowl: stir in oil, cucumbers, and onion.
        Combine remaining ingredients: pour over salad and toss. Cover and
        chill 3-4 hours, stirring occasionally. Serve with slotted spoon.

        Yield: 8 -10 servings.

            Bread & butter pickles! If you want the recipe I will have to find it, but it's a goodie. Best ones I have ever tasted!!! ((((& Kisses))))

              My mom did the same recipe as Bean's first one, except she added sour cream.

                My mom used to fry cucumbers. First she would peel them, then slice the long way and salt them, let sit for an hour or two. Then she would heat up some bacon grease and drain the cukes, mix up some flour and pepper, dip the cukes on both sides and fry till light brown. It's basically the same way you would do fried green tomatoes. Sometimes I would eat them, but she loved them.
